Interview with Fernando, Nodar, 18 June 2008

  GOATS

Luis: How do you get your goats?
Fernando: You go to a local market, it's easy. You buy them there.
Luis: Male or female goats?
Fernando: One male for twenty female.

Luis: What about food?
Fernando: In the summertime they don't need additional food, in the winter we give them some additional corn in the coral.

Luis: What exactly do you have to do each day?
Fernando: In the beginning you have to go with them into the hills and stay with them so they get used to being there and know how to get there. Then when some goats are killed and you get younger ones, the older ones know the way and they will lead the new ones.

Luis: Do you need a dog?
Fernando: The dog is for wolves and...
Luis: Are there wolves? Are they a danger?
Fernando: Yes, they can be. They are protected now so there are more of them.
Luis: And the dog scares them away?
Fernando: Yes.

Luis: What about milk?
Fernando: We don't use the milk, it's only for the newborn goats. But it's possible to drink it, of course.

Luis: If you want the milk, do you have to milk them every day?

Fernando: You have to keep an eye on the goats and see which ones have newborns. Those you can milk and you have to do it every day.

Fernando: To kill the goat you cut the throat and hang it on an iron hook. You cut it all the way down and with a knife you pull off the skin from top to bottom. You only keep the meat, the intestines are thrown away.
